Despite how busy I’ve been, I thought it is about time to actually cook something nutritious and affordable. I’ve been going to Trader Joe’s a lot more than usual since it is easier to cook for one there, and grocery shopping there does make it more of an activity than regular shopping for sure. I am not a big fan of trying random TJ’s things that they put out every month since it seems really extraneous, but they definitely have some classics that remind me how much I love TJ’s.
However, I do think that TJ’s is for few unique item selections only and I will be returning to HEB for actual cooking ingredients really soon. Have a good read!
Sausage shakshuka
3 eggs
2 links of sausages, coined
2-3 Roma tomatoes, chopped
Seasoning: olive oil, garlic powder, salt, pepper, hot sauce
Brown the sausage in a pan with some olive oil before adding the chopped tomatoes.
Season the tomatoes with salt, pepper and garlic powder. Let everything sweat out until it’s saucy and the tomatoes are mushed.
Make divetes in the sauce and drop the eggs in those divettes. Season the eggs with some salt and pepper. If you have a lid, cover the pan to let the eggs steamed. If not, just let it cook for about 7-10 mins.
Serve with some bread, rice or whatever ya want!
Mushroom, prosciutto and arugula pizza
Pizza crust or flatbread
Jar pizza sauce
Shredded mozzarella cheese
Sliced mushrooms
Arugula
Prosciutto
Preheat the oven at 425 degrees F. Spread the tomato sauce and shredded cheese evenly on the pizza crust.
Add the sliced mushrooms as much as you like. Sprinkle some salt over the mushrooms.
Bake for 10-15 mins until it cheese is melty and browned.
Serve with arugula and prosciutto on top. Enjoy!

eli and coffee bar that is located in the Clarksville area in Austin. It is definitely one of my favorite places because the cold brew is amazing, the pastries are phenomenal, and the deli bar is top notch. I recently came back for some cold brew, and it is still delicious as I remember. For funs and giggles, I ordered a chicken salad sandwich this time. I’d like to report that beside my chicken salad, this might be the best chicken salad I’ve ever had (even if it is $16).

My local Houston spot where I did a bulk of my studying and hanging out. I definitely had some sort of longing for coffee shop studying even when I am on my gap year. The coffee is great, but the food there is really wonderful! Also, lots of study/reading space and outlets to do your work. Make sure to get a bacon and egg croissant!
Trader Joe’s chocolate croissants
I don’t think I need to say much about how wonderful chocolate croissants are. These ones, though, are fantastic!
